Poutine with Le Bédouin Akawi cheese

(8 portions)


  • 2 cups of fries (store bought or homemade)
  • 1/2 cup of sauce
  • 1/2 cup of Le Bédouin Akawi cheese, diced

sauce recipe

  • 2 cans of beef broth
  • 1 can of chicken broth
  • 1 tablespoon of ketchup
  • 6 tablespoons of maple syrup
  • 1 clove of garlic, coarsely chopped
  • 1 teaspoon of peppercorns
  • 1 onion, finely chopped
  • 5 tablespoons of store-bought BBQ sauce
  • ¼ cup of butter
  • ¼ cup of flour
  • 3 teaspoons of water
  • 3 teaspoons of corn starch
  • 1 tablespoon of vegetable oil
  • Salt, to taste


  1. Caramelize the onion and garlic with the oil over medium-high heat.
  2. Add the cans of broth, ketchup, maple syrup, peppercorns and BBQ sauce. Boil for a few minutes while stirring.
  3. Melt the butter in another pot; add flour and combine.
  4. Pour mixture into broth and combine with a whisk.
  5. Mix the corn starch and water; combine with other mixture.
  6. Cook to desired consistency. Cook longer for a thicker sauce.
  7. When the sauce is ready, strain through a fine to medium sieve to remove the onions and garlic.

Place fries and cheese cubes in a bowl; add sauce and enjoy!
