Spring veggie salad

Ingredients

  • 2 asparagus
  • 1 small carrot
  • 1 zucchini
  • ¼ of a bulb of fennel
  • ½ cucumber

Preparation

  1. Use a mandolin to make thin ribbon lengthwise with the vegetables
  2. Stir veggies, except the cucumber, with the dressing of your choice
  3. Place veggies into a plate, make cucumber rolls and garnish with labneh
