- 2 cups French fries (store-bought or homemade)
- 1/2 cup sauce
- 1/2 cup Akawie cheese, cubed
Recipe for the sauce
- 2 cans beef consommé
- 1 can chicken consommé
- 1 tablespoon ketchup
- 6 tbsp. maple syrup
- 1 clove garlic, coarsely chopped
- 1 teaspoon peppercorns
- 1 onion, finely chopped
- 5 tbsp. commercial BBQ sauce
- 1/4 cup butter
- 1/4 cup flour
- 3 tsp. water
- 3 tsp. cornstarch
- 1 tablespoon vegetable oil
- Salt as required
Preparation
- Caramelize the onion and garlic with the oil in a saucepan over medium-high heat.
- Add cans of consommé, ketchup, maple syrup, peppercorns and BBQ sauce. Boil for a few minutes, stirring constantly.
- In another saucepan, melt the butter, add the flour and stir.
- Pour into the consommé while whisking.
- Add the starch-water mixture beforehand, mix and incorporate well.
- Cook until desired consistency. For a thicker sauce, cook longer.
- Once the sauce is complete, pass through a fine to medium sieve to remove the onions and garlic.
- Place the fries in a bowl, add the cheese cubes and pour over the sauce. Enjoy!
