Akawie Cheese Poutine

Ingredients

  • 2 cups French fries (store-bought or homemade)
  • 1/2 cup sauce
  • 1/2 cup Akawie cheese, cubed

Recipe for the sauce

  • 2 cans beef consommé
  • 1 can chicken consommé
  • 1 tablespoon ketchup
  • 6 tbsp. maple syrup
  • 1 clove garlic, coarsely chopped
  • 1 teaspoon peppercorns
  • 1 onion, finely chopped
  • 5 tbsp. commercial BBQ sauce
  • 1/4 cup butter
  • 1/4 cup flour
  • 3 tsp. water
  • 3 tsp. cornstarch
  • 1 tablespoon vegetable oil
  • Salt as required

Preparation

  1. Caramelize the onion and garlic with the oil in a saucepan over medium-high heat.
  2. Add cans of consommé, ketchup, maple syrup, peppercorns and BBQ sauce. Boil for a few minutes, stirring constantly.
  3. In another saucepan, melt the butter, add the flour and stir.
  4. Pour into the consommé while whisking.
  5. Add the starch-water mixture beforehand, mix and incorporate well.
  6. Cook until desired consistency. For a thicker sauce, cook longer.
  7. Once the sauce is complete, pass through a fine to medium sieve to remove the onions and garlic.
  8. Place the fries in a bowl, add the cheese cubes and pour over the sauce. Enjoy!
